Leap Day! a birth story

Happy birthday to us!  Four years ago today, on leap day, Muddy’s opened its doors for the first time.

For those of you who don’t know, the opening of this business was far from an idyllic process. Let’s start with today’s Lenten Message from my priest:

Leap day – this extra day every four years resets the calendar. What leap do we take today? What have we put off for years?  Perhaps today, this rare day, this extra day, is the day for that leap of faith.

IN 2007, I was in a job I wasn’t good at and was having a bit of a religious crisis.  I’m a pretty typical eldest child and the idea of not being in control is pretty tough for me.  I was particularly having trouble with the idea that God calls the shots and isn’t always fair (thank goodness) and basically that I should be in charge of my life instead of Him but that He should still be on “my side” and there when I wanted him to intervene.  Sounds pretty selfish, but I think all of us are there at some point(s) or another.

I was a quivering ball of anxiety and had to reignite my relationship with Him and decided to take a leap of faith.  I’d felt Him pushing me on the path toward opening the bakery, but didn’t feel ready (I’d never managed more than 2 people, never been promoted, and had NO IDEA what I was doing) and wanted to do it my own way, in my own time.
I decided that my leap of faith would either be sky-diving (I am TERRIFIED in airplanes) or throwing everything I had into opening a business that I had no experience or qualifications to run.  I went with the bakery, but I thought there was a good chance we’d out of business within 6 months.  However, I knew the important part was for me to learn how to trust him, to really risk something.  In conversation with God, I agreed that I would give it my all, throw my savings into it, my effort, etc and trust Him… not trust Him to make it a huge success, but trust that whether it succeeded or failed, there was something here for me to learn.  I figured this was probably an elaborate character-building exercise and I’d be broke and jobless before the year was out, but I was all in anyway.

It turns out that God, of course, had His own plan.  The business has succeeded in many ways so far and in ways beyond what I could’ve imagined; for example, I never dreamed that some of y’all would end up being close friends, would show up with old dishes for us just when we needed some, etc.  But this has also been a huge character-building experience.  I’ve learned so much about people, business, and baking.  Every day is an exercise in reminding myself just whose business this is and my place in it.  I’m learning stewardship.

It’s been an amazing ride so far and my promise to God still remains; I’m in this, for success and failure and I will do my very best to accept gracefully and with an open mind the challenges and victories in store.  Thanks to all of you for making this such a fun and life-changing experience.

Muddy’s opened on Leap Day in 2008, so tomorrow we will celebrate our birthday for the first time and we want YOU to join the celebration!!!

what’s in my toolbox?

Stacey Greenberg was kind enough to include me in a recent article for the Commercial Appeal on what Memphis bakers consider essential tools and ingredients.  It’s a great article and you should check it out!

Obviously, Stacey had to edit our contributions down, so below is a more complete list of tools I rely on when baking at home!

Kat’s Essential Tools

-oven thermometer. This is the easiest, cheapest way for anyone to be a better baker. No one’s oven stays calibrated perfectly and this will ensure that you’re baking at the right temperature.

-rolling pin. My favorite thing to bake is pies, followed closely by cookies, so this is indispensable. I know “the pros” like the French pin, but I’ve always preferred the kind with handles. When you buy, just see what feels better in in your hand and go with that. You want it to be comfortable, weighty, big enough to accommodate the dough you’re rolling out, but not too big for your counter space.

-Pyrex. Pyrex liquid measuring cups in variety of sizes, vintage pyrex oven-to-table ware, it’s all good and I love mine!

-Food processor. Holding 14 cups, my food processor is a beast.  Mom gave it to me for Christmas in college and it is one of my all time favorite gifts I’ve ever received. I didn’t have a stand mixer at home until 2010 (do the math… I started Muddy’s in my home kitchen in 2007), but I would’ve been lost without my trusty food processor. It can do cookie dough, but also help with non-baking tasks like shredding and chopping vegetables. If you have to pick one piece of pricey equipment, go with the food processor and get a cheap hand mixer for icings, etc.

-Pans. Two large sheet pans, two 8″ cake pans, one 9×13 brownie pan (use for lasagna too!), one muffin pan, and one 9″ pie plate. Get the best quality you can (check Cook’s Illustrated for shopping tips); these are the things you’ll use the most. Before you buy a novelty pan (madeleine pan, spring form, etc), check with your friends; someone can probably loan you one.

So yesterday was Aziz Ansari’s birthday and since we are all such huge Parks and Recreations fans (we are particularly fans of Aziz’s character, Tom Haverford) we couldn’t let the day slip by unnoticed.

Many of you have noticed our Aziz Ansari giant head on our apron mannequin; it was part of Hayley’s Tom Haverford Halloween costume.  Well, check out the birthday tribute below…

Storytime:
When I was little, Dad would frequently choose to not answer my myriad questions.  I only now appreciate that this was not from laziness or (entirely) a desire to be a smart-alack.  For example, I remember we were driving behind a big rig and I read the notice on the back of the truck out loud, “makes wide right turns”.  I immediately asked, “Dad, why only right turns?”  Instead of telling me why, he returned my question with one of his own.  “Why do you think?”
My young self ran through a couple of suggestions “maybe the wheels are bigger on one side.  Maybe they haven’t figured out right turns all the way yet.” (hey, I was a little kid).  Dad responded with, “No, think it through…”
After a minute of silence, I proudly announced “the turns are the same!  They just already have more room on the left.”  Bingo!

Which leads to…
One of my New Year’s Resolutions as a business owner is to let people figure it out more- to ask more questions and allow people to come up with some possible solutions on their own- to be there as a learning aide more than an “instant answer machine”.
When an employee asks how to do something or handle a situation, it’s often easier for me to just tell them how I’d handle it and move on.  But when I do that, I’m asking them to memorize my answer instead of encouraging them to employ critical thinking skills.  I hire bright, dynamic people and when I take this easy road I cheat them and myself of an opportunity to grow and provide better value and services in the future.

I’ll be counting on them to help keep me on track on this one; as an eldest child I tend to be a little Type A, so I know I’ll need their help on this one.

workin’ on the chain gang

We were super-proud and excited to host a Grace St. Luke’s 8th grade intern again this year (3rd year in a row!).  The program is fantastic; rather than a typical career day, the students choose a business a few months ahead of time and ask that business if they may join the team for three days in February.  They then work in the trench for those three days and it really gives an in-depth idea of the working world and the ups and downs of their possible career.  So cool!

This year our intern was Katie and she just rocked our socks off!  She came each day prepared to give 200% and handled herself with confidence and a great attitude; she even worked a 6am shift!  A bunch of y’all probably met her yesterday helping at the register and the bakery counter; she did a fantastic job and I hope she enjoyed her experience with us.

THANKS KATIE!  We all had a blast with you!!!

Here’s this week’s random collection of current obsessions!  Have fun and happy weekend!

1. Kyle Hilton paper dolls
Ah-mazing.  A bunch of tv shows are represented including Breaking Bad, Arrested Development, and staff favorite Parks and Recreation.  I love that there is a GOB Bluth paper doll and don’t even get us started on the Jarrod Taylor Ron Swanson one (below).

2. Juice
We love juice!  Check out A Beautiful Mess for 6 great juice recipes.  And we love Cosmic Coconut, our neighbors a few doors down, and the delicious juices and smoothies they make!  Some staff favorites include the Ah-sigh-ee smooth (acai puree, frozen bananas, frozen strawberries, coconut milk, and stevia ) and the Solar Power juice (oranges, carrots, apples, and ginger).  Yum!

3. Star Wars
From the Star Wars cookie cutters at Williams-Sonoma to the fan-art tee shirts, we have a lot of nerds Jed-heads up in here.  Check out the latest that’s been making the rounds…

One Hot Broad

Ok, the news has broken and it’s official: Muddy’s will have a presence on Broad!

Here are some FAQs to give y’all an idea of what the heck is going on.

Q. Is Muddy’s moving (away from Sanderlin)?
A. No.

Q. Will we be able to buy things there?
A. People will be able to pick up preorders there, but for the time being we aren’t planning to have a full scale retail operation.

Q. So what is it for?
A. Most of the space will be kitchen space dedicated to baking to help supply the Sanderlin store and also so we can accommodate more preorders. We will have a small, flexible customer space for booking special events, workshops, etc.   We also plan to offer walk-in retail for special events that are happening in the neighborhood like the Broad Ave Art Walk.

Q. What about parties/ can I book a party?
A. We hope to be able to rent the space for parties by the end of the year, but our primary focus is getting the construction done so our kitchen is operational. Stay tuned for info on retail and/or party rental.

Q. When?
A. The space is completely without plumbing, electrical, etc, so we anticipate that construction on the kitchen portion will be finished late spring to early summer. At that time, we can move our “Underground” (aka helper kitchen) to the Broad space and begin the renovations on the customer area (the space for events, etc).

Kat & Kip. Kip will be managing operations at Broad!

V Day Guessing Game Winners!!!

The big question on everyone’s lips…
How many cupcakes did Muddy’s sell on Valentine’s Day????

Thanks to everyone who played a guess and CONGRATS to Wes Phillips who guessed 3,416!  The actual number of cupcakes sold from the bakery case was 3,433 and he got the closest.  Wes has won a dozen assorted cupcakes and a cherry pie!

We also counted the TOTAL number of cupcakes sold (this time including pre-ordered cupcakes) and that number is 4,566.  We decided to award a runner-up prize to the person whose guess was closest to that number, so congrats to William Rosser who guessed 4,675.  William has won a two dozen assorted cookies!


For the nerds who are wondering how the numbers broke down, here’s how folks guessed…
The smallest guess was 73 cupcakes… and the largest was 32,763!
