Fun House S2, Ep 8... Lemon Thyme Butter Cookies

In S2; Ep 8, we make one of Kat's very favorite cookies to snack on, Lemon Thyme Butter Cookies!  A buttery shortbread-like cookie with a perky pop of citrus and fresh herbs.  YUM!  We also take our time in this episode to learn a bit about how to measure flour using both volume and weight measurements.

Ingredient List for the Bake-a-long:

  • 450 g (3 cup) all purpose flour

  • ½ tsp salt

  • 2 Tbl chopped fresh thyme

  • ¾ lb (1 ½ cup) butter, room temp

  • 130 g (1 cup) powdered sugar

  • 1 tsp vanilla extract*

  • zest of 2 lemons

  • lemon juice (from the 2 lemons)

  • more powdered sugar

  • a  little more chopped thyme leaves
